Love my crock pot!
I bet you all know this, but I LOVE my crock pot! Here's my favorite easy recipe...
Crock pot Chicken Tacos
2lbs chicken breasts (boneless/ skinless)
2 cans corn (or one bag frozen)
1 can black beans
2 cups salsa (the yummier the salsa, the better this will turn out)
2 cups cheddar cheese
Mix 1 c. salsa, corn, and beans in slow cooker. Top with chicken. Top chicken with one more cup of salsa. Cook on high for 2 1/2 hrs. Shred chicken. Mix everything together. Top with cheese. Serve with taco shells or tortillas and your favorite taco toppings when cheese is melty! Serves 6. Yum!

Busy Saturday!
Today was busy!!! I went to breastfeeding class! I know, I needed it! I am going to be a substitute teacher for the breastfeeding class at a local hospital! Yea! I am really excited! I'm also going to teach their baby care basics class in 2011! So, for 2.5 hours, the third Monday of the month, you know where I'll be :o) I'm hoping this will be a great way to get my foot in the door and possibly maybe even up my hours to 5/month. It might be too much of a stretch! I'll keep you posted!
This morning I left the house at 8:30 and I didn't get home until 1:45. I REALLY missed the boys, despite REALLY enjoying my morning. It felt kind of good!
Then, this evening, we had FRIENDS over for dinner. We met friends! Yea! They have a boy who just turned 4 and a little boy 4 days older than Ben. Their boys are very blonde and similarly complected to Owen and Ben. It was quite a pack of little blonde and wild men!
It was a very fun and busy day!

Finally, Fun with Cousin Olivia
I didn't know what Ben would think, as he has been quite hot and cold on baths lately. He loved it, as did the big kids! Then we met everyone for pizza! What a day! Oh, when we got home we were greeted by a horrible smell! I finally found the culprit... a rotten sweet potato! It almost made me sick. Of course, Mike could "barely smell anything."

Good Night!
I just got home from Knit Night at the knitting store. It was a lot of fun :o) Got a lotta knitting done, which I like. And, I came home empty handed, so Mike was happy, too. I haven't made much progress on my sweater, but I have made a couple of gift baby hats. I am reading the book "The Help" and it is really good. This week, I didn't do much knitting because I just wanted to read and I tend not to be able to balance doing both very well. It's pretty much one or the other. I better finish that book quickly because I need to get back to my holiday knitting!

Veteran's Day!!!
Well, thanks to all the Veteran's out there! We really appreciate all that you do/ have done! And, we love that Veteran's Day is a government holiday and that Mike gets a paid day off of work! Today was a beautiful day. We picked Police Officer Owen up at preschool and went on a picnic at the park. The boys had a fantastic time. It was a fun change of pace having Mike home during the week! Definitely a good perk of working for the government.
We just wish Mike could stay home tomorrow, too!

Bounce U
Today we went to this place called Bounce U. Both boys loved it and had a blast, as did I! I honestly think Mike was jealous! It is huge and there were only about 10 kids there, so the boys pretty much had free run of the place. There were also 2 people who worked there helping the kids climb on things, running, playing, chasing, and refereeing, too. It will definitely be a good place to visit this winter.
